Not All Tomatoes Are Created Equal
Tomatoes are probably one of the most popular vegetables (or fruits, to some) and they come in many different sizes, shapes, and flavors. Some are cultivated in greenhouses while others are grown on large farms. Varieties range from tiny grape tomatoes to hearty Beefsteaks, but all are grown for the market. Most are sent to high-tech, sanitary plants. There the process of washing, grading, and tomato sorting takes place. The vegetables are divided according to their quality and eventual use. Some will be sold whole, some for purees, and others for paste or sauce. Eventually the many end products are packed and shipped to destinations all over the world.
